Beef-Barley Stew recipe
Ingredients: 1 lb ground beef
1 medium onion, chopped
2 c. beef broth
2/3 c. uncooked barley
2 tsp chopped fresh oregano
1/4 tsp salt
1/4 tsp pepper
1 (16 oz) can whole tomatoes, undrained
1 (8 oz) can sliced water chestnuts, undrained
1 (10 oz) package frozen mixed vegetables Procedures: 1. Preheat oven to 350 degrees F.
2. Spray a 10-inch nonstick skillet with nonstick cooking spray. Cook ground beef and onion, cooking until the beef is browned. Drain.
3. Add barley, oregano, tomatoes, water chestnuts, salt and pepper to a 3-quart casserole dish. Add browned beef and beef broth. cover and bake 30 minutes.
4. Stir in mixed vegetable and stir to break up tomatoes. Cover and bake to 30-40 minutes longer or until barley is cooked through. Notes: A hearty and simple beef stew perfect for cold winter nights, this beef barley stew is easy to cook in just a few steps. Frozen vegetables, canned tomatoes, and ground beef are baked in a casserole dish, making this dish the perfect weeknight dinner.
