Cranberry Pudding recipe
Ingredients: 1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 cups cranberries
1/3 cups boiling water
½ cup molasses
1 cup white sugar
½ cup butter, softened
½ cup heavy whipping cream
1 teaspoon vanilla Procedures: 1) Lightly grease a 2-quart metal container or coffee tin.
2) In a large bowl, sift together flour, baking soda, and salt. Add cranberries, water, and molasses; stir well to mix. Spoon into prepared container; cover with a layer of foil and fasten with a heavy elastic band.
3) Place filled container into a deep saucepan; will with water up to about halfway of the height of the container. Cover saucepan and bring to a boil over high heat. Reduce to a simmer and cook 1 hour. Remove container from water and allow to cool. When ready to serve, invert container onto serving plate; slice into ½-inch pieces.
4) Meanwhile, prepare the sauce: combine sugar, butter, and cream in a medium pan. Cook over medium heat until thickened, stirring constantly. Add vanilla, stir, and pour over prepared pudding. Notes: Bring back a traditional dessert that the whole family will fall in love with - all over again. Cranberry pudding, cooked over a stovetop, just can't be beat by any pre-packaged pudding varieties.
